Iceberg MemoriesJuly 27th, 2009
This is my niece. She doesn’t always look this squinchy, but sometimes life just makes you squinch! Maybe she’s been listening to my audiobook.
I’m all about iceberg lettuce these days. I know, I know… it’s a throwback to salads from the 70s, and maybe that’s why I’m so attracted to it. Just gimme a summer Friday evening, schooldays but a fading memory, with "I Dream of Jeannie" following "The Brady Bunch" on the boob, and the iceberg lettuce with the Kraft salad dressings goes down like a dream.
Of course, as a sophisticated Grown Up Lady, I treat my iceberg with a little more respect. Here’s my latest dressing:
1/2 a really ripe avocado
1/2 a bunch of fresh cilantro
1/4 cup extra-virgin olive oil
1 teaspoon organic dijon mustard
1 teaspoon umeboshi vinegar
1/2 teaspoon shoyu
1 teaspoon maple syrup!
Whiz all the ingredients in a food processor or blender. If it’s too thick, just add more olive oil until you have a nice creamy consistency. Adjust seasonings to taste… (you might need more ume vinegar).
Toss into salad of chopped iceberg (I like chopped it into squarish bites, not shredded), fresh red onion and cucumber slices… mmm… and stay cool.
